_Yo-yo dieting is not the answer -- ever. It compromises
your health and demoralizes your spirit. Only adopting a healthy eating
style for life will provide you with good health and a consistent,
healthy weight.
You will not be taught to count calories, but you will learn that calories do count. You will not be taught to go hungry, although you will learn how to be satisfied with fewer calories. You will develop new eyes for recognizing which foods provide fantastic nutritional benefits with very few calories, and which ones provide gobs of calories with little or no nutritional benefit. And most important, perhaps, you’ll learn which foods are both high in nutrition AND high in calories, and learn to consume them judiciously.
We’ll explore such subjects as calorie density and nutrient density, how to choose foods that fill you up better, how to eat foods in a certain order so that you actually end up eating less. You’ll learn how certain foods actually help prevent you from making fat deposits, while others make a beeline for your belly and thighs. You’ll also learn how some foods contain “resistant starches” which don’t give up all their calories to you. We’ll also address problems with “recreational eating” and “stress eating.”
Many people find it easy to lose weight by simply switching to a plant-based diet. But unfortunately, for some that doesn’t seem to be enough. Some people lose a few pounds, but can’t seem to get down to their ideal weight. Others discover the joys of vegan convenience foods and actually begin to gain weight! If you haven’t managed to lose the weight you want to lose, or are having trouble maintaining your weight loss, this class is for you.

- Learn how to shop for and prepare simple, delicious, healthy, filling, low-calorie meals.
- Eat REAL foods, not manufactured “diet foods.” We don't use any special supplements or hormones.
- Learn how to make your meals more filling and satisfying with fewer calories.
- We will focus on nutrient-dense foods: foods high in nutrients and low in calories.
- Learn how to be in charge of the rate of your weight loss, by varying the calorie density of your foods according to your needs.
- This is not a diet. You are learning a new way to eat, permanently!

Each class will contain nutritional information, a cooking demonstration, and an opportunity to sample the food. These classes are offered in Anchorage and Wasilla, starting January 11 & 12, 2012 respectively.
